HMD 330 - Hospitality Purchasing and Cost Control Best practices in purchasing management and cost (variable and fixed) control within the hospitality industry. Factors including sourcing, purchasing, receiving and storing procedures along with cost-based forecasting are examined. Focusing on optimizing profits, examination of: types of costs, factors that impact cost management, and analytical methods to control costs.
Credits: 3 Prerequisites: Harrah College of Hospitality Major. Minimum of C grade in HMD 130 and HMD 221 .
