Nutrition Sciences Minor

The Nutrition Sciences minor provides students with a multi-faceted view of human nutrition. Students earning a minor in Nutrition Sciences will study foundational sciences, such as principles of nutrition, nutrition assessment, cultural/ethnic issues related to nutrition and health, nutrition through the life cycle, community nutrition, and macronutrient metabolism. Students will be able to choose one 3-credit elective course in nutrition to apply toward the minor.

Learning Outcomes
- Apply critical thinking skills.
- Discuss the impact of health care policy and different health care delivery systems on food and nutrition services.
- Describe contributing factors to health inequity in nutrition and dietetics, including structural bias, social inequities, health disparities, and discrimination.
- Develop a nutrition-related educational session program/educational strategy for a target population.
- Practice routine health screening assessments, including measuring blood pressure and conducting waived point-of-care laboratory testing (such as blood glucose or cholesterol).
