AAS 240 - Soul Food, Gender, and the History of the African Diaspora


Same as Same as WMST 240   and HIST 240 .
Examines new foodways created in the African Diaspora to the Americas, focusing on food’s role in the construction of African American culture. Spanning from Medieval West Africa to the present, topics investigated include enslaved foodways, the creation of Black restaurants and cookbooks, and women’s culinary and horticultural expertise.
